The carrot cake is a classic of American pastry, and now you can easily prepare it at home thanks to this recipe for children. A juicy and unique sponge cake for children's snacks or breakfast.

As children do not usually like vegetables, we can look for recipes with some ingredients, such as zucchini or carrots, which we can include without fear in both salty and sweet children's recipes, such as carrot cake with cream cheese.

  • 400 gr. carrots
  • 350 gr. Of flour
  • 300 gr. brown sugar
  • 5 eggs
  • 150 ml. of oil
  • 3 teaspoons yeast
  • 2 teaspoons cinnamon
  • 350 gr. cheese spread
  • 350 gr. butter or margarine
  • 575 gr. icing sugar

For the cake:

1. Wash and peel the carrots. Grate them and reserve.

2. Beat the oil with the sugar with a whisk. Add the eggs one by one, and then the milk.

3. Sift the flour with the yeast and cinnamon until well mixed. Add the flour to the previous mixture little by little, beating well so that there are no lumps. Add the grated carrot.

4. Preheat the oven to 175ºC. Divide the dough into two removable molds, so that there is the same amount in both.

5. Bake for about 25 minutes, until it comes out clean when you click with a toothpick. Remove and cool on a rack before unmolding.

For the cream cheese:

1. Beat the butter or margarine (at room temperature) until soft and creamy. Add the icing sugar little by little, beating at low speed.

2. Add the cream cheese. Beat well until just mixed.

3. To assemble the cake, place a layer of the cheese frosting (approximately half) on top of one of the cakes. Place the other cake on top and squeeze a little. Pour the cream cheese on the other cake and decorate with marzipan carrots or fondant, or with chopped almonds.
