- 4 eggs
- ½ glass of milk
- 2 potatoes
- 1 green pepper
- 1 yellow bell pepper
- 2 tomatoes
- 1 onion
- Green olives
- 30 gr. grated cheese
- Chopped parsley
1- Wash and cut the peppers and tomatoes. Chop them up and reserve them.
2- In a frying pan, with a little oil, fry the chopped onion, plus the peppers and tomatoes.
3- Add the potatoes in small cubes, until they are almost done. Add the olives.
4- In a bowl, beat the eggs and add the milk, cheese, parsley and salt. Beat well.
5- Add all the vegetables to the beaten eggs and mash them slightly with a fork so that they adhere well to the egg.
4- In a frying pan, heat a little oil and when it is hot pour all the tortilla mixture.
5- When the tortilla is done on one side, turn it so that it is done on the other side. It will be ready when it starts to brown.
6- Remove the tortilla from the heat, let it rest on kitchen paper and then serve it with a light salad or some rice. Enjoy your meal!
