The Roscón de Reyes It is the Spanish culinary tradition of January 6 par excellence. The Kings Day It is not Kings Day without this sweet. And there is nothing better than waking up with a sweet taste in your mouth after a magical night full of emotions for young and old. Cooking with children is a way of bringing them closer to food and its preparation.
At Christmas, bring your children to the kitchen and prepare this delicious recipe for Roscón de Reyes. They will love it!
- 650 g of strength flour
- 250 ml of warm milk
- 25-30 g of fresh yeast
- 120 g of sugar
- 120g butter, softened
- 2 eggs and 1 yolk
- 10 g of salt
- 2 and 1/2 tablespoons of orange blossom water
- 2 or 3 tablespoons of rum
- Grated skin of 1 large lemon and 1 orange
- Candied fruits to taste
- A beaten egg

|1- First mix a little warm milk with a few tablespoons of flour. The crumbled fresh yeast is added and a pinch of sugar is sprinkled on. Cover and leave to ferment for about an hour in a warm place.|
In a separate container, sift the rest of the flour with the salt. Add the zest of a lemon and an orange, the orange blossom water, the rum, the white sugar, 2 whole eggs and a yolk, the rest of the milk and the ferment. Everything is mixed and finally the melted butter is added. Work the dough until it is homogeneous.
|2- The dough is very sticky. We dump it on a floured surface, and with our hands well greased with flour, we begin to knead. You will have to add flour little by little until the dough is workable.|
It should be soft, elastic, smooth, slightly sticky, but when you press it a little with your finger, it will not be difficult to separate it. Then roll it into a ball and place it in a large floured bowl; We cover with a film and one or two kitchen towels, and let it rise for about two hours, in a warm place without drafts, until it is doubled in size.
|3- We work the dough again, and we shape it. We put the roscón on the already prepared baking tray, paint it a little with a beaten egg, cover and let it rest again for about an hour-hour and a half.|
Then it is repainted; candied fruit, almonds and / or sugar are placed and surprises are hidden underneath. With the oven preheated to 200ºC, it is baked at medium height, lowering the temperature to 180ºC. It will be ready in 20-25 minutes or so.
|4- After a few minutes out of the oven, let it cool completely on a rack, here you have the roscón de reyes. If the recipe makes you too big, you can make smaller roscones and take the opportunity to give them to family and friends.|
