- 6 eggs
- 100 gr. diced York ham
- 200 gr. fresh or frozen peas
- 1 large potato
- 1 small onion, minced
- Parsley
- Salt to taste
- Oil
- Pepper (optional)
Tips: If you want to make a softer and lighter omelette, add about 2 tablespoons (soup) of milk to the egg mixture.
1- Wash and peel the potato and cut it into small pieces.
2- Take the potato pieces to a frying pan to fry them in hot oil. When they are done, remove them from the oil and leave them on kitchen paper so that all the fat is absorbed. Reserve.
3- In another pan, put a little oil and sauté the chopped onion.
4- When the onion begins to be transparent, add the peas and sauté them until done.
5- The next step is to add the ham into pieces, stir everything and let everything be done.
6- Add the potato and the chopped parsley, correct the salt.
7- In a bowl, beat the eggs and then add everything else.
8- In a frying pan, with a little oil, arrange the tortilla until it is golden brown on both sides.
